Halve the buns and toast if you wish.
Combine in a bowl the cooked chicken slices, hoisin sauce and sweet chilli sauce. Thinly slice the cucumber and spring onion.
Spread the mayo over the base of each bun, then top with the hoisin chicken. Lay the veg on top and finish with the bun lids.
Share between 2 serving plates.
