- Boil a full kettle.
- Heat a drizzle of oil in a frying pan on medium-high heat.
- Once hot, fry the sausage meat and mushrooms, 4-5 mins.
- Break it up as it cooks, then drain the fat. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat.
- Meanwhile, pour the boiled water into a saucepan with 0.25 tsp salt on high heat.
- Boil the spaghetti, 8 mins.
- Next, add the chopped tomatoes, chicken stock paste, sugar (see pantry), chilli flakes and tomato puree to the sausage meat.
- Stir together. Simmer, 5-6 mins.
- Add the spinach in handfuls, making sure it's piping hot, 1-2 mins. IMPORTANT: Cook so there's no pink in the middle.
- Once cooked, add the spaghetti to the sauce.
- Stir in half the hard Italian style cheese. Taste and season with salt and pepper if needed.
- Serve the pasta in bowls sprinkled with the remaining cheese.
- Enjoy!
Review summary
Updated on Aug 2026- Flavour: The rich tomato-based ragu is well-received, though some found it milder than expected; others felt the chilli heat was quite strong.
- Ease of prep: A genuinely quick and straightforward weeknight dish, with minimal chopping and a simple one-pan sauce.
- Suggestions: Adding garlic and fennel seeds to the sausage meat can deepen the flavour; fresh herbs or extra vegetables are also worth considering.
- Next-day meals: Some found the meat quantity a little light for a family of four adults, so consider scaling up the sausage meat if cooking for a crowd.
