Cooking Steps

Quick Prep
1
  • Boil a half-full kettle. Pour it into a saucepan with ¼ tsp salt on high heat.
  • Boil the rice, 10-12 mins.
  • Once cooked, drain, pop back in the pan and cover.
Get Frying
2
  • Meanwhile, heat a drizzle of oil in a frying pan on medium-high heat.
  • Once hot, fry the pork mince and Cajun spice mix (add less if you'd prefer things milder), 5-6 mins. Break up the mince as it cooks. IMPORTANT: Wash hands and utensils after handling raw meat.
  • Meanwhile, cut the avocado into chunks.
Flavour Time
3
  • Season the mince with salt and pepper. IMPORTANT: Cook so there's no pink in the middle.
  • Next, stir in the tomato puree, chicken stock paste, honey and water (see pantry for both).
  • Simmer, 3-4 mins.
Dinner's Ready!
4
  • Share the rice between bowls and spoon over the Cajun pork.
  • Top with the avocado and the baby leaves. Drizzle the baby leaves with a little olive oil.
  • Sprinkle over the crispy onions and drizzle with soured cream.
