Cooking Steps

Get Started
1
  • Heat a drizzle of oil in a large saucepan on medium-high heat.
  • Once hot, fry the chicken, 8-10 mins. Season with salt and pepper. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
  • Meanwhile, trim the pak choi. Separate the leaves.
  • Cut any larger leaves in half lengthways down the middle.
Simmer Simmer
2
  • Add the Malaysian style paste, ginger puree, pak choi and young pea pods to the chicken. Fry, 1-2 mins.
  • Stir in the creamed coconut, soy sauce, sugar and water for the sauce (see pantry for both). Bring to the boil.
Finish Up
3
  • Add the udon noodles. Simmer until warmed through, 2-3 mins.
  • Taste and season with salt and pepper if you feel it needs it.
  • Add a splash of water if needed.
Dinner's Ready!
4
  • Share the noodle laksa between your serving bowls.
  • Top with the peanuts to finish.
