Cooking Steps

Get Started
1

a) Halve the bell pepper and discard the core and seeds. Chop into 2cm chunks.

b) Peel and grate the garlic (or use a garlic press). Trim the pak choi, then thinly slice widthways.

Fry Time
2

a) Heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once hot, add the beef mince and pepper chunks. Season with salt and pepper.

c) Fry until the mince has browned, 5-6 mins. Use a spoon to break up the mince as it cooks.

d) When the mince has browned, drain and discard any excess fat. Season with salt and pepper. IMPORTANT: Wash your hands and equipment after handling raw mince. It's cooked when no longer pink in the middle.

Make the Sauce
3

a) Meanwhile, put the oyster sauce and sweet chilli sauce in a small bowl.

b) Add the ketchup, honey and water (see pantry for all 3 amounts).

c) Mix together and set aside.

Make the Drizzle
4

a) In a small bowl, combine the sesame seeds and chilli flakes (add less if you'd prefer things milder).

b) Drizzle in a little oil and mix well - this is your sesame-chilli drizzle. Set aside for later.

All Together Now
5

a) Once the mince has browned, add the pak choi and stir fry for a minute, then lower the heat and stir in the garlic. Fry until fragrant, 1-2 mins.

b) Add in the sauce you made in step 3 and bring to a simmer.

c) Add the udon noodles to the pan. Toss to coat, using a fork to gently separate them. Stir-fry until piping hot, 1-2 mins.

d) Add in the edamame beans and toss until coated in the sauce. Add a splash of water if needed. Season with salt and pepper.

Serve Up
6

a) When everything's ready, share the beef udon between serving bowls.

b) Elevate me: Spoon over the sesame-chilli drizzle over the adult portions to finish.
