Instructions

Prep the Fruit
1

a) Preheat your oven to 220°C/200°C fan/gas mark 7.

b) Peel, quarter, core and roughly chop the apples. Roughly chop the dried apricots.

c) Add the apples, dried apricots, 1 tbsp of the sugar and the water (see pantry for amount) to a medium saucepan.

d) Heat the apple and apricot mixture on medium heat until the apple begins to soften, 7-8 mins. 

Prep the Crumble Topping

a) Meanwhile, chop the butter (see pantry for amount) into 1cm pieces.

b) In a large bowl, combine the flour and the remaining sugar. Add the chopped butter and rub it in with your fingertips until the mixture looks like breadcrumbs.

c) Stir the granola and toasted flaked almonds through the flour mixture.

Time to Bake

a) Once softened, remove the apple mixture from the heat and stir through the apricot jam.

b) Pop the apple mixture into an appropriately sized ovenproof dish. Evenly top with the crumble mixture.

c) Pop the crumble into the oven on the top shelf and bake until the crumble is golden and the apple is bubbling, 20-25 mins. TIP: Put the dish onto a baking tray to catch any drips.

d) Allow to cool slightly before serving.
