Sweet Chilli Sauce

a) Preheat your oven to 220°C/200°C fan/gas mark 7.
b) Halve the spring onion widthways. Drain the prawns.
c) Pop the white part of the spring onion, the prawns and the ginger, garlic & lemongrass puree into a blender. Season with pepper and blend until smooth, 30 secs. IMPORTANT: Wash your hands and equipment after handling raw prawns.

a) Halve the ciabatta.
b) Divide the prawn mixture over the 2 halves of the ciabatta, spreading evenly to the edges.
c) Cut each piece diagonally into 4 triangles, making 8 triangles in total.

a) Pop the sesame seeds onto a small plate. Dip the prawn toast into the sesame seeds to cover all the prawn mixture.
b) Heat a drizzle of oil in a large frying pan on medium-high heat.
c) Once hot, lay the prawn toast, sesame-side down, into the pan and fry until golden and crisp, 2-3 mins.

a) Pop your prawn toast onto a baking tray and onto the middle shelf of your oven until crisp and golden, 5-7 mins. IMPORTANT: The prawns are cooked when pink on the outside and opaque in the middle.
b) While the prawns bake, thinly slice the remaining spring onion.
c) Once baked, pop your sesame prawn toast onto your serving plate and sprinkle over the sliced spring onion.
d) Serve your sweet chilli sauce in a bowl on the side for dipping to finish.
