Cooking Steps

Cook the noodles
1

a) Fill and boil your kettle. Pop the noodles in a saucepan. Cover with boiling water and cook on medium heat until tender, 4 mins. b) When cooked, drain in a colander and run under cold water to stop the noodles cooking further.

Brown the pork
2

a) Meanwhile, heat a splash of oil in a large frying pan over high heat. b) Add the pork and sprinkle on the Thai spice (be careful it's spicy! add less if you're not a fan of heat). c) Cook until browned, breaking it up with a wooden spoon as it cooks, 5-6 mins.

Prep time
3

a) While the pork is cooking, halve the pepper and remove the core and seeds. Slice into thin strips. b) Trim the spring onions then slice thinly. Roughly chop the coriander (stalks and all). c) Halve the lime. Add the green pepper to the pork and cook until softened, 3-4 mins.

Make the sauce
4

a) Mix the Ketjap Manis with the rice vinegar and honey together in a bowl. Squeeze in the lime juice. b) Add the spring onions to the pan and pour the sauce onto the pork. Bring to a simmer. Bubble for 2 mins.

Finish off
5

a) Stir the cooked noodles and half the coriander into the pork. b) Stir to coat the noodles and cook until everything is piping hot.

Serve
6

a) Share the noodles between your bowls and finish with a sprinkle of remaining coriander. Enjoy!

Review summary

Updated on Aug 2026
  • Flavour: A well-seasoned, sweet-and-spicy sauce makes this a satisfying midweek dish; some find it mild, while others find the Thai spice quite fiery.
  • Ease of prep: This comes together in around 20 minutes with minimal prep, making it a reliable choice on busy weeknights.
  • Suggestions: Add extra Thai spice, a splash of soy sauce, or a squeeze more lime if the flavour feels flat; some cooks also stir in mushrooms, beansprouts, pak choi, or broccoli for more variety. If the dish turns dry, try doubling the sauce or reducing the amount of noodles slightly to keep everything well coated.
  • Next-day meals: Leftovers keep well and reheat nicely, though the dish is best enjoyed fresh for the fullest flavour.
  • Portions: Some find the portion on the smaller side, particularly for hungrier adults; an extra nest of noodles or a little more meat can help bulk it out.
  • Texture: A scattering of cashews or peanuts adds a welcome crunch and rounds out the dish nicely.
