
Super speedy, this Peri Peri Meat-Free Cheeseburger Inspired Bowl takes only 15 minutes to make. The combination of meat-free mince, cheese, burger sauce and slaw give this rice bowl its American inspired and vegetarian twist.

a) Bring a large saucepan of water with 1⁄2 tsp salt to the boil on high heat.
b) Halve the salad potatoes (no need to peel).
c) When boiling, add the potatoes to the water, lower the heat to medium and cook until tender, 15-20 mins.
d) Once cooked, drain in a colander. Let cool, then add a knob of butter, season with salt and pepper, then toss together.

a) Meanwhile, halve, peel and chop the red onion into small pieces.
b) Halve the baby plum tomatoes.
c) Trim the baby gem, halve lengthways, then thinly slice.

a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once hot, add the onion and meat-free mince to the pan and stir-fry, 5-6 mins. IMPORTANT: Ensure it's piping hot throughout.
c) Add the peri peri seasoning for the last min of frying.

a) Stir the ketchup, honey and water for the sauce (see pantry for all three amounts) into the mince and simmer until thickened, 2-3 mins.
b) Stir the butter (see pantry for amount) into the mince until melted.
c) Season with salt and pepper.

a) Meanwhile, grate the Cheddar cheese.
b) Add the tomatoes and baby gem to a bowl with half the burger sauce and toss together.

a) When everything's ready, add the spiced mince, tomato salad and boiled potatoes to your serving bowl in separate sections.
b) Sprinkle the cheese over the mince and drizzle the remaining burger sauce over the potatoes to finish.
