Instructions

Cook Rice

  • Boil a half-full kettle.
  • Pour the boiled water into a large saucepan with ¼ tsp salt on high heat. Add the rice. Cook, 12-13 mins.
  • Drain in a sieve and pop back in the pan. Cover with a lid. Leave to the side until ready to serve.
  • Meanwhile, drain the tofu and chop into 2cm cubes. Pat dry with kitchen paper. Trim the leek. Halve lengthways, then thinly slice.

  • Heat a drizzle of oil in a large frying pan on high heat.
  • Once hot, fry the tofu and leek, 8-10 mins. Turn frequently to ensure it doesn't burn. Season with salt and pepper.
  • Add the Thai style spice mix, hoisin sauce, black garlic paste, sugar and water (see pantry for both). Stir well to combine.

  • Trim and quarter the radishes. Trim the cucumber. Cut into small 1cm pieces. 
  • In a small bowl, combine the radishes and cucumber with the sweet chilli sauce and rice vinegar. Season. Set aside. 
Dinner's Ready!

  • Share rice between bowls.
  • Top with the tofu stir-fry and cucumber radish salad
  • Scatter over the sesame seeds to finish.
