Cooking Steps

Get Started
1

Preheat your oven to 220°C/200°C fan/gas mark 7.

Peel and grate the garlic (or use a garlic press). Grate the Cheddar cheese.

Halve the lime. Cut the tomato into 1cm chunks.

In a small bowl, combine a good squeeze of lime juice and a pinch of sugar. Stir in the tomato, season with salt and pepper, then set aside.

Fry Time
2

Next, drain and rinse the black beans in a sieve.

Heat a drizzle of oil in a large frying pan on medium-high heat.

Once hot, add the beans to the pan and roughly mash half of them using a potato masher or the back of a fork. Stir in the water (see pantry for amount) and garlic. Fry for 2-3 mins. Season with salt and pepper.

Transfer to a bowl and cover with a lid to keep warm. Give the frying pan a quick wipe clean.

Fry the Beef
3

Return the (now empty) pan to medium-high heat (no oil).

Once hot, add the beef mince. Fry until the mince has browned, 5-6 mins. Use a spoon to break it up as it cooks. In the last min, stir in the Central American style spice mix.

When the mince has browned, season with salt and pepper. IMPORTANT: Wash your hands and equipment after handling raw mince. It's cooked when no longer pink in the middle.

Drain the Corn
4

While the beef fries, drain the sweetcorn in a sieve.

Bake the Quesadillas
5

Build your own: Lay the tortillas (3 per person) onto a lightly oiled baking tray and spoon on whatever fillings people would like: spiced beef, beans, sweetcorn and cheese.

Fold the other side over to make a semi-circle. Press down to keep together.

Rub a little oil over the top of each one, then bake on the top shelf of your oven until golden, 8-12 mins.

Serve
6

Share the quesadillas between your serving plates. Top with the tomato salsa for those who want it.

Serve the rocket on the side. Squeeze over some lime juice and drizzle over some oil if you'd like your rocket dressed.
