Benefits and Versatility of Aubergines
Aubergines (also known as eggplants in the US) are famous all over the world for their health benefits, flavour and most of all, their versatility in recipes. Not only can they be roasted, baked, boiled, fried and more, they're also full of antioxidants and high in vitamins A and C which help protect your cells from damage. From the nightshade family (that also include tomatoes and courgette), aubergine is actually a berry that thrives in hot climates and seasons and can grow in a variety of shapes, sizes and colours.
